Tappanyaki, what it is and how to use it. Teppanyaki restaurant tips and history of this style of Japanese cuisine.
Teppanyaki, what is it
Theteppanyakiis a style ofJapanese food. Many bloggers define it as a "Japanese cooking method" but this definition can be misleading because it would suggest that a plate food can be prepared according to a Japanese technique.
The wordteppanyakican be divided into two terms,teppanwhich stands for "iron plate" eyakiwhich means "grid".
In Japan, with the termteppanyakiit refers to one cooking style more than a cooking method. We used the term “cooking style” because the cook is generally on sight and prepares food even by doing stunts with tools and the same food. In other words, food preparation becomes a beautiful art to see and taste.
With the teppanyaki the foods are prepared using a red-hot iron plate fed directly by electric resistances, burning coals or a gas flame. There is no further tool placed between the flame and the food because it is the hot iron plate (teppan) itself that constitutes the hob that comes into direct contact with the food.
Oriental cuisine fascinates everyone, so restaurants have spread throughout the world that bring to view, a steel hob and where the cook prepares the dishes in front of the diners. In these restaurants, part of the kitchen is visible and is represented, in fact, by the hobteppan.
In Italy there are several teppanyaki restaurants, for personal knowledge I point out the Teppanyaki Italia in Salerno (Giffoni sei casali).
Teppanyaki, how to use it
Theteppanit is used like any iron plate. In fact, currently the plates that make up iteppanyakithey are made of steel and not of iron.
Before use, it is advisable to grease the plate with oil to prevent food fromget burned.In Japan, before each use, the plate is greased with soybean oil. Here in Italy we can use the healthiest olive oil.
Another trick, try to cook food using different cuts and thicknesses. The thickness of a food strongly affects its cooking.
As stated, any grilled or grilled recipe can berevisitedfor cooking on teppan. Experiment: it's up to you to make the adjustments according to your palate.
In Japan it is not uncommon to find chefs ready to prepare typical dishes such asYokisoba or sauteed rice using theteppanyaki.
Generally, on the iron plate are prepared:

- Meat (beef, pork, chicken, kid ...)

Here's onerecipeto prepare on your ownteppanyakijust bought. Ingredients:
Made to slice thicker than usual
- 1 sweet white onion
- 1 bell pepper
- 1 Zucchini
(although in Japan courgettes are not used and it is very rare to find them in grocery stores)
- 1/4 of Kabocha squash
- 8 Shiitake mushrooms
- Olive oil
(although soy is used in Japan)
For the sauce:
- 1/2 dried chilli
- 1/4 of soy sauce
- 1 teaspoon of sugar
- 2 tablespoons of Mirin
- 1 teaspoon of grated garlic
- 1/2 tablespoon of sesame seeds
- 1 teaspoon of olive oil
How to proceed
Start preparing the sauce that you will need to accompany the beef. You can put all the ingredients in a kitchen mixer and operate it at maximum power.
Slice the vegetables. Pay attention to the thicknesses that will strongly affect the flavor of your dish. For the mushrooms ... use only the "hat" and set aside the stems for a soup or a velvety.
Heat the plateteppanafter greasing it with olive oil. Start grilling the vegetables and plate the meat at the same time.
Tools for teppan yaki
To manage the food on teppan yaki, special kitchen tools are used such as spatulas for meats and vegetables. To lift food residues onteppanit may be necessary to use a special scraper. Among the tools available, I recommend:
- Scraper with 11 cm blade
- Angled kitchen scoop
